Eggs In Puff Pastry!

2 Pkg. Pepperidge Farm "Puff Pastry Shells"      (follow directions to bake)

1- Dozen Eggs- beaten

1/4C. shredded Monterey Jack cheese

1/4 C. chopped ham

2 Tbl. diced onions

2 Tbl. diced red or green peppers

*Can add mushrooms sliced and saute'ed


Scramble eggs until wet and soft, fold in cheese, ham, peppers

and onion. Finish cooking eggs until meat is warmed through.

Pile into puff pastry shells on plates to serve.

Top with prepared cheese sauce.

*Optional- garnish with snipped chives.

Prepare Cheese Sauce:

1/4 C. flour

1/4 C. butter

2C. Milk

1 C. Monterey Jack  or Cheddar cheese- grated

Mix together flour and butter to make a roux,

blen in milk; cook until thickens, boil slowly.

Add cheese, blend but do not boil. Serves 10


It is easier than it sounds and so worth the work.
